2. Before you stack the cake layers, you’ll need to add some additional supports into the cake. You can leave the cake layer on it’s round and simply stack on the layer below, but it will be much easier to disassemble and cut the cake if you utilize actual cake supports which will give your spatula a extra room to maneuver between the board and the frosting.
Tip: You can buy cake supports at many kitchen and bakery supply stores – or – we suggest using drinking straws cut to the proper length.

Tip: Make sure the straws extend no further than a quarter inch from the cake’s surface.

Tip: To pull out the straws for further adjustment we suggest a clean pair of needle-nose pliars or tweezers.

The wedding cake shown below is known as a flush-stacked wedding cake: You can see how the layers have been stacked above eachother without any pillars elevating the layer and creating space between them.

3. Double check to ensure the bottom level is flat. We suggest placing a clean cardboard cake round on some supports and then crouch down so that you can visually verify the flatness. True professionals sometimes use small carpenter levels to further ensure precision wedding cake construction.

Next, being careful to avoid a wedding cake disaster, lower the layer down. You stand over the cake and look down to ensure that the levels are centered…this mistake is common among beginner wedding cake decorators. You may want to have a helper for this and an offset spatula also comes in handy to avoid marring the wedding cake icing.
